100% Tinta de Toro
Wine from the Land of Castilla y León.
The grapes come from a pre-phylloxera vineyard with ungrafted root stock dating back to 1895. The wine has the Toro Denomination of Origin, from sandy pebbly soil vineyards at an altitude of 810m.

IN THE WINERY
Manual harvest in 15 kg fruit boxes, followed by 24-48h in cold storage then onto a selection table where the grapes that are not in perfect condition and the leaves are discarded. The stems are removed but the grapes are not preseed.
The grapes macerate in tanks for 4 to 5 days at a temperature of under 10 degress, wich is then raised to 20 degrees so that fermentation begins spontaneously and with native yeats.
During alcoholic fermentation over pumping is performed every day to extract colour and tannins from the skin, when this is finished there is further maceration for 4 days and te wine is drained into barrels where malolactic fermentation takes place. Bâttonage is carried out daily, and when the wine is ready it is racked, the barrels are washed and refilled with the wine, where it ages for 16 months and tasted straight from barrel. It is then bottled and left for a few months in cages.
Aged for 16 months in new medium toast barrels 10% Spanish oak and 90% French oak.

Pairs with bluefin tuna, red meats, sausages and stews. A good partner for chocolate desserts.
